We found a place a few blocks from our house in Cuernavaca called Léonas. She serves the same whole seasoned chicken cooked on a rotisserie, 2 different mole sauces, and a different side dish depending on the day. The whole meal for 4 is 100mxn great deal and delicious, it's become our go to when we're too lazy to cook. We love those types of places.
This is so up my alley but as I get older It's not so much of the economics of this that surprises me. It's a perfectly sound business model. But what questions me more now is the general health of the food in there. Is it any unhealthier to more "pricier" options in the city? I don't mean that in a fast-food vs wholesome meal (that these cocinas are) way. I mean it in a -Is the oil and produce,etc good-kind of way ? Thanks!
Interesting question! My Spanish really isn't good enough (yet!) to talk to the people who work there about how they source their ingredients. Paul and I do joke around about how we wouldn't feel comfortable buying chicken in the mercados to cook at home, and yet that's almost certainly where these places get it :) I have no idea how the produce compares to other places. As far as the oil goes, I don't think they use much of it, at least in the dishes we like.

We would love that! We cook a whole chicken at home every week. Mole would put it over the top!
